Creamy Peas and Onions

  • 2 16 oz bags of frozen peas, defrosted (run under hot water until defrosted)
  • ½ cup marinated onions, chopped
  • 1 cup cashews, soaked for an hour
  • ¾ cup water
  • Juice of one lemon
  • 2 Tbs. olive oil
  • ½ tsp. sea salt
  • ¼ tsp. white pepper

In a powerful blender, puree cashews and olive oil, until the cashews start to break down. Add water and blend until you achieve a thin, white sauce. Place defrosted peas and marinated onion in a large bowl. Add sauce and mix thoroughly.

Excellent white sauce; I’d never cared for conventional white sauces but this one is great, & I’ll also use it in other dishes. One question: What marinade is used for the “marinated onions”? I didn’t see any marinade recipe within the Creamy Peas and Onions recipe, so used a package of frozen peas & whole pearl onions, & added a “Garlic Herbed Seasoning” we’d received as a holiday gift. Delicious, bur am still curious about those “marinated onions”. Or did you buy them in a delicatessen, farmers market, or where?
