    Raw mac and cheese … cheesy broccoli … cheese dip???  Is it possible to get that cheesy taste without all the health issues and concerns that come along with dairy?

    Well, maybe so if you are interested in a little kitchen experiment with nutritional yeast, a somewhat cheesy tasting alternative that provides all nine of the essential amino acids for a complete source of protein.

    The Nutritional Power of Nutritional Yeast

    Nutritional yeast is also a good source of B vitamins, including thiamine, riboflavin, niacin, pantothenic acid, pyridoxine, biotin, folic acid and B12.  It is aids in detox via glutathione and supports the immune system via beta-glucan. Quite a few health benefits and the added plus of creating those cheesy dishes our children sometimes crave.

    I have to admit that at first my own taste buds, which grew up under the influence of Kraft macaroni and cheese in that blue box, have had a little adjustment period in adapting to nutritional yeast.  But, now that my body has come to crave raw foods and healthier options, nutritional yeast is tops in satisfying an occasional cheese craving!

    3 Cheezy Recipes Everyone Will Love

    The 3 cheesy recipes listed below all use the same cheese sauce recipe…

    Here’s how to make it!

    Recipe for Raw Cheese Sauce

    Ingredients:

    • ½ cup cashews
    • ¼ cup chopped onion
    • Cashews for Raw Cheese Sauce Recipe1 tablespoon apple cider vinegar
    • 2 tablespoons tamari
    • 1 tablespoon olive oil
    • 1 /4 cup nutritional yeast
    • pinch pepper
    • water, if needed

    Directions:

    Mix of ingredients except water in your Vitamix, Blendtec, or other high-speed blender.  If needed, add a little water to facilitate blending.

    Et voila! Cheesy sauce without the cheese!


    1. Cheesy Kale Chips

    Ingredients:

    • Raw Food Recipe for Cheesy Kale Chips1 bunch kale
      (washed and dried thoroughly)
    • raw cheese sauce
      (recipe above)

    Directions:

    Prepare the raw cheese sauce. Tear kale into bite sized pieces. Massage the raw cheese sauce mixture into the kale pieces and dehydrate overnight!


    2. Cheesy Noodles and Broccoli

    Ingredients:

    • Raw Food Recipe for Cheesy Noodles and Broccoliraw cheese sauce
      with about ¼ cup water added
      (recipe above)
    • kelp noodles
    • finely chopped broccoli

    Directions:

    Mix and enjoy!!!


    3. Cheese Dip/Spread with Veggies

    Raw Food Recipe for Cheese Sauce with Veggies for Dipping

    Ingredients:

    • veggies of choice,
      such as carrots, cucumbers, celery
      (cut and sliced)
    • raw cheese sauce
      (recipe above)

    Directions:

    Dip your choice of prepared veggies in the raw cheese sauce, or spread it on dehydrated crackers.

    Add a little red pepper and some cumin and/or cayenne to taste and spice it up a bit!

      I’ve seen several cheese sauce recipes but non with apple cider vinegar, so I’m really anxious to try this out. I’m sure the apple cider vinegar gives the sauce the “twang” that’s missing in most of the veggie cheeses.
